Hair strands different thickness?
Is it normal for hair strands to have different thickness? I noticed that some of the hairs i shed are thicker than others?

You can't tell and that's a real bummer. All I can suggest is take good quality photos every few months so you can have something that is easier to compare and more reliable than memory.
