Every few months, I use Google Takeout to download a copy of my entire Gmail inbox.

Is there a better way?

Have you tried this https://emailindetail.com/archive-emails tool? This tool is unique in its kind. I'm pretty sure you can download the emails locally with that. The tool is easy to use despite its modern interface that makes it easy for users to archive and convert.
